Daffy's Duck and Sweet Potato Loaf
Makes 12 servings
If you can't find duck or you don't feel comfortable cooking with duck, this recipe works wonderfully with chicken or turkey. It will keep for 3 days in the refrigerator or up to 1 month in the freezer.
1 pound duck breast, cooked and shredded
2 cups cooked diced sweet potatoes
1 tablespoon olive oil
1/2 cup corn
1/4 cup chopped fresh parsley, or 1 1/3 tablespoons parsley flakes
1/2 cup plain dry bread crumbs
1 teaspoon salt
1 tablespoon brewer's yeast
1/2 teaspoon dark or light molasses
2 cups chicken stock
2 eggs, beaten
1. Preheat the oven to 350 degrees. Spray a loaf pan with nonstick cooking spray.
2. In a large mixing bowl, combine all the ingredients and blend well.
3. Place the mixture
in the prepared loaf pan and bake for 45 minutes to 1 hour or until a knife
inserted into the
center comes out clean. Let cool, slice, and serve.
