Gobble, Gobble Turkey Casserole
Makes 6 servings
This recipe is especially great around holiday time. I often have leftover turkey that I never know what to do with. A great tip is to chop your leftover turkey and freeze it in 8 ounce bags. That way, when you're ready to make a dish, you can pull an exact portion out of the freezer. You can also freeze the prepared casserole for 3 months or refrigerate it for 3 days.
1 pound cooked turkey, cut into bite-sized pieces
or shredded
8 ounce can corn, drained
8 ounce can sliced carrots, drained, or 1 pound fresh carrots, cooked
8 ounce can clam chowder
1 cup cooked brown rice
1 tablespoon plain wheat germ
1/4 cup chopped fresh parsley, or VA tablespoons parsley flakes
1/2 teaspoon brewer's yeast
1. Preheat the oven to 350 degrees. Spray a large casserole dish with nonstick cooking spray.
2. Stir all the ingredients together and place in the casserole dish.
3. Cover and cook for
25 minutes or until heated through; a knife inserted into the center should come
out clean.
Let cool and serve.
Rice Preparation Hints
Rice is very good for pets, so I use a lot of rice in my recipes. Investing
in a rice cooker makes life easier; all you need is a basic model. If you must
cook your rice on the stove, never lift the cover of the pot once the cooking
process has started—doing so will ruin the rice. I have lost many pots of rice
by lifting the cover too soon. Follow the box instructions closely!
